The old Distilleries

From the 1850s it was possible to produce completely pure spirit by means of rectification.  The potato stills remained in rural districts where the supply of raw material was crucial. However, many stills joined forces to establish distilleries or processing companies. These enterprises had the capability to render potato spirit – mainly as aquavit, bitters, liqueurs and punch.

The centralization occurred in the wake of fresh legislation introduced in 1847, and which dramatically curtailed the profitability of small distilleries, leading to a swift concentration of players in the distilleries industry.

Many products from the old stills still exist today, and are produced on the basis of the original recipes. Some of these have existed ever since the beginning of the 19th century.
